couple dozen jars a YEAR, so I'm not heading for blue-ribbon land any
time soon.)

Question: The little jars on top of the rack in the 14th picture down
-- are those just to show the stacking concept, or are you actually able
to cover them with water when they're like that?

Thank you. I'm just having some raspberry jam on whole grain toast
right now and, man, that stuff is good! I hope Sister Julie will have
more raspberries for me this year. :-\

A bit of both. :-) I can easily stack two layers of half pints when I
use the stockpot rather than the Bigass Demeyere for processing. The
Demeyere made a better picture. The jars are covered but not by the
recommended inch. And a low boil is required to keep overflow to a
minimum. If I'd used the Ball Elite half pints I could probably have
put three layers in that kettle. :-) Those jars are two inches high
and I can get four in one layer. I can process my pint jars in the
Demeyere with good coverage and can get a couple more jars in it than I
could in the Farberware stockpot.

I don't use an "official" canner because they're not a good fit for my
burners at home. (This project was not done in my home.)

Just-plain-raspberry is my favorite of all fruit preserves in the world.
On toast with butter, it's heaven to me.

I am thinking that now that I reliably can at least *something* every
summer, I might invest in a bigger pot. I've been canning in my plain
old deep-six-quart stockbot with the flat bottom, but it doesn't hold
more than about seven regular or five wide-mouthed half-pint jars, and
that means lots of batches sometimes.

I absolutely agree! And that's how I've been eating the extra that
wouldn't fill a jar. About four pieces of whole grain toast yesterday
with a schmear of butter and a gob of raspberry jam. Be still, my heart.

Tomorrow's leftovers will be "It's The Berries" jam -- blues, reds,
blacks, and cherries. Tasty.

My *supermarket* carries some cheap stockpots -- maybe $15 -- perfect
for waterbaths and making soup. I wouldn't want to try to brown
anything in it, though ‹ too thin and burning would be unavoidable,
AFAIC. My Farberware is a gem that I picked up for $20 at Kohl's a few
years ago. IT can be used for more than waterbathing; it has a decent
bottom on it.

Yum and taken on as a challenge in the future I think

We are Strudel addicts but cant make the pastry to save our lives
the filling NO problem . But 50% of the pastry efforts turn out
disasters or spot on ? Go figure

Would have a go at "jammin' it" myself if it wasn't so ridiculously hard
to find pectin in this neck of the woods (believe it or not). Not one
of the things that is generally stocked in the 'baking section' at our
local stupidmarkets. Sigh. Of course, I'd also need one of
those 'pressure canning' gizmos too - but I have seen those for sale at
some kitchen places here...

You don't need a pressure canner for jams, jellies, canned fruits,
pickles. You need a large kettle for processing the jars in boiling
water. And you need appropriate jars for canning--I've no idea of their
availability to you.
