Note that he's talking weights *not* cup measure!!! You'll come a cropper
if you use volumes!
As for his bread dough formula, he's quoting a classic French recipe that
works with French flour. For Canadian and US bread flours, you have to add
extra water.

Take a good look at it first. I don't think you'd benefit from it. I left
the copy I looked at in the store.

There was an article recently about it, in NYT IIRC, that I'd read before
I'd make a decision also.

We were in NYC at the Strand on Sunday, and I checked it out, handed
it to my DH and said "Mother's day."

It's relatively small, about the size of a trade paperback. If noone
else beats me to it, I'll tell y'all about it Sunday.
