Default Oh Muse, where art thou?

I have a block of tofu draining in the fridge, and an extra punnet of
grape tomatoes on the counter. Dinner needs to be quick and easy
tonight.

Suggestions?

Start cooking rice however you like doing it.

Slice an onion and a clove of garlic. Cut tofu into half-inch blocks. Heat
some oil in a skillet. When hot, add a half-teaspoon of cumin and turmeric
and a eighth of a teaspoon of cinnamon and cayenne. Cook very briefly, then
add the onion and a generous pinch of salt. After about 30 seconds, turn the
heat down and add the garlic and a quarter-cup of water. Allow to simmer for
about five minutes.

During those five minutes, cut the grape tomatoes in half and mix them with
yogurt, cilantro, and sugar to taste.

When the five minutes is up, add a cornstarch slurry to the onion mixture
and heat to boiling. Add the tofu and stir gently to coat with the sauce.

Do "quick and easy" ever go along with tofu? I know delicious is certainly
out of the question ...

I'd make macaroine and toss it with grated cheeses, a bit of milk, maybe
tuna, and garnish with the tomatoes.

We had a Japanese exchange student who would come home from school and
slice off a half pound chunk of tofu, and eat it plain with a glass of
milk. Now _that_ gave me pause, but she seemed to like it.

TOFU ANTI-PASTO

Recipe By :

1/3 c Black olives, pitted
1 c Mushrooms, quartered
1 c Celery, sliced
1 1/2 c Tomatoes, diced
1 ea Red bell pepper, julienned
1 ea Yellow bell pepper, julienne
2 ea Green onions, sliced thinly
1 1/2 c Tofu, diced
1 ea Garlic clove, chopped
1 1/2 ts Oregano
2 tb Balsamic vinegar
1/4 c Olive oil
Salt & pepper, to taste

Combine the vegetables & tofu in a large mixing or salad bowl. Add
the rest of the ingredients & mix gently to combine. Marinate at
room
temperature for 30 minutes. Check the seasoning before serving.

Stir fry the tofu with scallions, a bit of garlic-chili paste, perhaps
another veggie, serve with tomatoes roasted in olive oil & salted.

This goes with challah?

Soon to be son-in-law marinates tofu in some sort of soy mixture. I'd
try equal parts soy and water, equal parts grated fresh ginger and
finely minced fresh garlic. You only need a couple of hours, but it
can sit overnight if you want. I'd use those tomatoes in a salad.

The problem was we had over 2 punnets of the tomatoes lying around and
they do go bad on us. AT that price, I wouldn't usually use them for
cooking, but necessity is the mother of inventions.

Suggest to STBSIL that he use broth instead of water for the
marinade. If he's a vegetarian, it can be veggie or garlic broth. If
he eats tasty animals, chicken, beef or fish broth work well.

Thank you all for your suggestions. This is how they melded together:

Started some rice.
Diced the tofu, and set it to marinade in soy, sesame oil, hoisin,
garlic, onion, ginger, sherry pepper, and red wine.

Diced the onion and garlic. Heated the oil in the wok. Threw in
cumin, turmeric, cinnamon and ancho chili. Stirred.
Added onion, stirred for a bit. Added garlic and water,13 oz of
broccoli, and salt. Covered, lowered heat and set the timer for 5
minutes.

Halved the cherry tomatoes and minced some scallions.

Added some potato starch, stirred. Added tofu, marinade, tomatoes and
scallions. Raised the heat to simmer off some of the liquid.

Served over rice.

I'd make tofu cakes. Chop up some onion, some thawed shrimp, (or a
tiny bit of ground beef), a drop or two of soy, grate in some carrot.
Mash all together with an egg and the tofu. Fry in sesame oil and a
drop of two of hot chili oil. Goes good with oven fries and a
cucumber salad.
