I found panko breadcrumbs in the store so decided to buy some. Earlier
today I marinated some chicken breasts in olive oil, seasonings that included a tiny pinch of cayenne pepper, garlic salt, rosemary, lemon rind, sage, and a few others. I'm not experienced with what herbs to use together, but it sure smelled good. After marinating, I ground up some almonds that I need to use up and added it to the panko and coated the chicken with the mixture. Heated some olive oil with a pat of butter to medium heat and fried the coated chicken and turned a few times until done. Served over mashed tators. Yum. The almond flavor didn't really come through much, but you could tell it was there. -- Cheryl |
