We inherited the MIL's good garlic press. However, it broke
(eventually). Never found another as good. Sigh.

Oddly enough, IKEA carries a very good study metal one. Never lets me
down. So if there's one in your area...

The tool that I use the most is my red, silicone spatula. I would also
not be able to manage without my Swiss "Star" peeler. (I've been forced
to be without one for a brief time and I was miserable until I found
another.) My giant Forschner's chef's knife would be the other
necessity. I could improvise with everything else but those 3 things I
would sorely miss.

Unfortunately not. We spent a small fortune on a garlic press that was
supposed to be the greatest-thing-since-bubble-gum from one of our
local "high quality brand" kitchen stores - and it was metal too... No
such luck. It lasted a month or two.

So we just use a heavy knife to chop/smash up garlic. and it still
tastes good ;-)

I have to disagree.

I do find my MW oven useful, but when the power goes off (which happens
fairly often 'round here) I don't shed any tears about losing the use
of it.

We're not terribly prone to power outages around here (except when a
hurricane occurs of course <g>) so I use ours for many purposes... I do
even cook in it.

Slightly off topic, but I have friend who relocated to South Africa from the
US and wonder how he deals with power outages. Said friend is blind but
works around it quite well.

OK, MWs aside, there's the early hand-cranked dual-spindle mixer.

Wish I had one, only if just for show!

I remember Mom's. Don't remember what became of it. It was probably the
first kid-safe appliance we were taught to use.

I think we first learned to mix pancake batter using it. It could be a
battle between us just to get control of it. If sis cried, we'd step back
looking all shy and innocent.

I don't think many of these are "can't live without" - it's a want vs
need thing. Having gone without one for a few months during some
really hard times, I'd say a refrigerator would come to the top of my
list over most of these.

Stove top/oven - you need a heat source.
Counter space/double-bowl kitchen sink/kitchen scissors/dutch oven/ss
pots/sieve/grater/collander - these are all luxuries in my book.
You need something to cut on (board), something to cut with (knife),
and something to cook in (pot). The can opener is damn useful, but
you can open cans with a knife if necessary. Other than that, I'd say
a bucket, soap, and source of water.

I could get by with no fridge if I had a Coleman-type cooler that I
pack with store bought ice; I'd do this before I could go without
knife, utensils, some sort of surface for prep.

If I had no heat source I could still eat raw food. You
can even make coffee by soaking overnight at room temp.
But a source of water for washing vegetables and cleaning
up is essential.

So the bare minimum is:

Sink/detergent
Kitchen Knife
Other utensils, plates, bowls
Surface
Salad bowl, jar for making coffee tea, pots, containers, glasses
Cooler
Swiss Army Knife

Nice to have also: coffee grinder (perhaps hand-operated)

A good way to reset your thinking on this is to spend time
in a very underequipped vacation cabin or hotel room.

You don't need much, actually.

I've seen 'em advertised but, you'll have to pardon me Dora, it is
probably the one device I would least use in the kitchen and wouldn't
