Why on earth do you think I'm manufacturing tragedies in the form of losing
both of my parents in a single year? I'm allegedly trying to "outdo"
Damsel? WTF! Do you think losing both of my parents in a year is funny?

I've got you both killfiled (except Greg keeps morphing, as he's always
done; my killfile can keep up, so I just add him and whatever fake domain he
chooses to create.) You really should stop posting crap about me. Stop
dragging me into your bullshit. I have no idea what you think I did to you
but you really should give up.

Ps, my personal favorite "herb" combo for fish is dill and lemon or
orange peel.

Pepper and onion to taste. Never garlic! IMHO as much as I enjoy
garlic, it tends to overwhelm fish.

The exception to that (for me) is a very VERY small amount added to
shrimp.

Last Saturday afternoon my neighbor came over with crappie filets he
had caught ice fishing on Friday. I've posted a catfish po-boy recipe
here before that I pieced together. I used that recipe with the
crappies and blackened them on the turkey fryer base. They were some
amazing sandwiches. They're just as good with catfish.

Anyway here's the recipe for anyone who wants it. As usual I never
follow anything as written but I'm sure there's enough basics here to
follow as one chooses. Wimps can omit the giardiniera.

Catfish Po-boy's

Prepare a batch of Aioli. The man who served me added a teaspoon on
prepared horseradish to the end product. I highly recommend this.

aioli Gourmet | September 2002

Active time: 10 min Start to finish: 10 min

Makes about 1/2 cup.

chef Jody Adams
ingredients
2 garlic cloves
1 large egg yolk
2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
3 tablespoons vegetable oil
preparation
Mince and mash garlic to a paste with a pinch of salt using a large
heavy knife. Whisk together yolk, lemon juice, and mustard in a bowl.
Combine oils and add, a few drops at a time, to yolk mixture, whisking
constantly, until all oil is incorporated and mixture is emulsified.
(If mixture separates, stop adding oil and continue whisking until
mixture comes together, then resume adding oil.)

Whisk in garlic paste and season with salt and pepper. If aïoli is too
thick, whisk in 1 or 2 drops of water. Chill, covered, until ready to
use.

Cooks' notes:
• The egg yolk in this recipe is not cooked, which may be of concern
if there is a problem with salmonella in your area.
• Aïoli can be chilled up to 2 days.



Catfish Po-boy's

SERVES 4

* 1 lb catfish fillet
* 2 tablespoons olive oil
* 1 tablespoon garlic powder
* 1 tablespoon onion powder
* 1/2 teaspoon salt
* 1 teaspoon white pepper
* 1 teaspoon black pepper
* 1 teaspoon cayenne pepper
* 2 teaspoons thyme
* 1 teaspoon paprika
* 1 teaspoon oregano

1. Place the fish fillets in a large bowl and drizzle olive oil over
them, let stand for 30 minutes.
2. Combine spices in a 9-inch pie plate.
3. Heat a cast iron skillet upside down over high heat for 5 to 10
minutes or until very hot.
4. Turn on vent fan during cooking to eliminate smoke.
5. Using a hot pad, turn pan right side up.
6. Remove fish fillets from oil and drain.
7. Dip each fillet into seasonings and coat each side evenly.
8. Put fillets in hot skillet and cook 2 to 3 minutes per side,
turning only once.

Cut french bread in portion sizes. Slice in half and hollow out a bit
if you prefer. Spread both halves with aioli. Top bottom with
catfish and top that with Chicago style giardiniera to taste.

I do love farm raised catfish They're very expensive these days. I
remember when they were $1.99/lb. Farm raised, yep. Nice mild fish.

Yeah, I know. :-( Farm raised catfish fillets run $4.99 per lb.

<sigh>

Nuggets are up to $1.99 at the moment. I prefer those deep fried, but
they are not bad poached either.

My main flavorings for fish usually involve dill weed and lemon.

Nothing to do with being "funny".

I've seen many posts in here where it almost /does/ seem like certain
people are trying to 'outdo' each other in the tragedy/sympathy stakes.
It's quite an odd thing to witness, really. I don't think I've seen
anything quite like it in any other group.

Seriously, I'm the most sympathetic soul in the world when folks are in real
trouble or have some bad luck or whatever. I've not a smidgin of
compassion, however, when someone (oh, let's say, JILL) repeatedly comes on
here to play their out - of - tune toy sympathy violin, it's manipulative in
the *extreme*, simply low - class and in the sheerest of bad taste. I've a
lot more friendly feelings for someone like Damsel, who seems to have a
continual string of lousy luck and crummy breaks, and when she does come on
here to speak of it she manages to not be in the "crying jag" mode and even
can have a sense of humor about a bad sitch...dear Kili was another one who
never complained. I don't know how I could even hold up in their
situations, I'd hope I'd have something of the strength of character or
humor or good grace to keep a sane perspective as they have shown us they
do...

If I had a magick wand *this* Good Fairy would grant Damsel & Co. a life of
worry - free luxury and ease and happiness...POOF! Were that it was that
easy...

As for Jill, I wouldn't do anything...her own miserable company in being
alone is punishment enough for her IMNSHO...

I never wish bad things on *anyone* that I dislike, just being the sorry
pukes that they are is punishment enough as I know they are being eaten up
inside by their lies and prevarications. I'd SURE hate to be Jill, is all I
know...

Now Jill is going to be all outraged by my words and I smirk knowing that
the steam will be coming out her ears when she reads my maledictions. But
hey, she *started* the whole mishegos, not me...apparently she must be
rather bored or something.

Sorry but I wasn't trying to "outdo" anyone. My parents died. Today would
have been my mother's 83rd birthday.

What people don't realize is Damsel and I had been emailing each other
again. Some people still want to keep stirring up a bunch of shit. That
would be the ones in the subject line; they definitely aren't in the loop.
Isn't it funny how that works?

years later. No one can help you, it's unfortunately your own burden.
Lashing out doesn't do much good except to turn away people who might
otherwise offer words of comfort.

Greg Morrow and Bob and other people lashed out at me for expressing my
grief. I expected a little better from some people of this group. But then
again, why should I? It's been overrun by a bunch of Peter Lucas Trolls.
My call? I'm mourning my mother, not try to compare myself to Damsel by
having some weird drama competition.

I'm not the one who brought that up. Terwilliger is the one who brought up
some sort of off the wall comparison. And I have no idea why Morrow keeps
dragging my name into things and suddenly siding with Cybercat. He's like
my new Sheryl Rosen; criticize my every post. I'll killfile them both until
the cows come home.

Oh, you might remember about 12 years ago I wondered where I'd seen the
statue of the Little Mermaid? Apparently there was a duplicate statue on
the beach on the island of Penang, in Malaysia. (My family vacationed there
in 1970.) I found some old photographs in the closet. Apparently it's
Penang I remembered. I know the original statue is in Copenhagen and we did
stay there overnight on the flight back home from Bangkok. But my mother
was right, I never saw the real thing. I did see it in Malaysia, though

And presumably if you were 28, your parents were also young. Very sad as
it is so early in life. BTDT.
I think most people who have parents who have reached their 80's are
realistic enough to know that their parents aren't immortal and that
they'll get "that call" eventually.
