Red Pepper Oil
makes 2 cups

2 cups extra-virgin olive oil
8 jalapeno peppers, seeded and chopped
into 1/8-inch dice
2 tablespoons hot red pepper flakes

Place the oil, jalapenos, and red pepper flakes in a medium saucepan and
place over medium heat. Heat to 175F, remove from the heat, and allow
to cool. Allow to stand overnight and strain out the solids.

The oil can be refrigerated for up to 1 week.
