Default Bad memory? Who, me? (plus RECIPE)


I just put a banana bread in the oven after being quite proud that I
hadn't forgotten to add the bananas this time (almost did last time!)

As I was cleaning up the counter I began to close the egg carton.
Hmmm, strange. I thought there had been only four eggs in there when I
opened it, and I see four eggs.

DUMMY! Rush for the oven where luckily the bread had only spent about
60 seconds. Pulled out the pan, poured the batter back into the mixing
bowl, and it hadn't started to firm up yet. I cracked in the two eggs,
got it all mixed and back in the oven.

It looks OK. Time will tell.

It's H#LL to get older but I guess it beats the alternative.

James Beard's Banana Bread 1 loaf

2 c. sifted all purpose flour
1 tsp. baking soda
1/2 tsp salt
1/2 c. butter
1 c. granulated sugar
2 eggs
1 cup mashed very ripe bananas (about 2)
1/2 c. milk
1 tsp. lemon juice or vinegar
1/2 c. chopped nuts

Sift first three ingredients together. Cream the butter and gradually
add the sugar. Mix well. Add eggs one at a time, then bananas and mix
thoroughly. Combine milk and lemon juice which will curdle a bit.

Slowly and alternately fold in the flour and milk mixtures, beginning
and ending with the dry ingredients. Mix well after each addition.
Stir int he nuts, then pour the batter into a lavishly buttered 9x5 inch
pan and bake in a preheated 350deg. oven for one hour or until the brad
springs back when lightly touched in the center.

Yes I did, THIS time. I have forgotten in the past and had to guess how
long something had been baking.

At least I've never left the house forgetting something baking in the
oven. Thank Barb's Alex for small favors.

I'm not alone in forgetting to look at the clock when something
goes in the oven? Is it that difficult to do? I often forget to do
that. Luckily I'm usually not baking.

I got a kick out of you forgetting the eggs. Especially with
quiche, I've had to quick add the mushrooms/spinach/whatever
to already filled pie crusts.

Okay, this may be too late to save my reputation, but in the
midst of putting together said banana bread there was a Very Important
phone call from a neighbor about Someone Breaching the Neighborhood
Covenants. Shortly after I got back to the mixing, Dear Husband
demanded I find my last year's ski pass because he needed the code
number on it to renew online IMMEDIATELY.

Not Good Excuses, but excuses nonetheless.

Who am I kidding? Those things really happened, but 10 years ago I
could have done it right with one hand tied behind my back.

How can you be expected to remember every ingredient under
those conditions? Just be glad the carton of eggs was sitting
there or you might have wound up with banana rock bread.

I have gone so far as to set the timer but not hit the start button
when I put the stuff in the over. It tends to happen more often when
I am doing multiple batches of things like cookies. Set the timer,
hang it around my neck, start it for the first batch. This particular
timer returns to the set time when you hit stop so I am likely to
forget to start it again.

I'd never do anything like that Mind you I did discover that bread
does not rise very well without yeast.

ingredients prior to starting comes in handy. :-)

Timers are a godsend. My cooking has been SO much better now that I've
stopped "guestimating".

I am getting really good (well, most of the time!) about mise en
place. No matter what I am cooking.

The last time I messed up, was when Arri London came over to dinner.
However, it wasn't too bad a mess up: I was going to fix a Lidia
recipe for spareribs. I didn't check in advance to see if I had
honey, (cause I always have honey around!) and it turns out I had
none. So the recipe got abbreviated to not having a glaze on it.
Still turned out fairly good.

The timers' "ping" on the oven and microwave in this house are too
soft (one only pings once, the other three times). If I have my head
stuck in the computer I often didn't hear it and didn't notice
anything amiss until a) the smoke alarm went off, or b) I smelled
burning. Finally got smart and bought a small timer that I keep by the
computer. It doesn't "ping," it has a "brrrrriiiinnnngggg!" that would
wake the dead.

I hired a guy to listen for them for me. I can't be bothered with pings
and such.

Sounds good. :-) Do you keep any raw sugar around? I light syrup made
with that tastes similar to honey, at least to me.
