Default I am in heaven!!

Okay..not really...

But...

I just got a new TV that is a HDTV...and now on the cable outlet it
is hooked up to, I can get some HD channels. One is a PBS one....

And they have a regular lineup, every day..of great cooking shows. I
just found this out yesterday....

And it goes into the night...

I just watched a Mark Bittman episode, where he took on Suvir
Saran..the Indian chef. I learned something new about okra..and how
to make it less slimy...

Did I mention that I am getting more interested in Indian food? I
am...it is a great cost saving cuisine.... And this program just
fueled it....

Now watching a program called Chefs a'Field.

So, for the rest of you, that have HDTV, check out your local PBS
stations...they might be showing more food programs on an HD station..

It's certainly good stuff. The vegetarian south Indian cuisine is also
good and interesting, even for folks like me who are omnivores. The
biggest problem with Indian food, for TV cooking shows at least, is that
much of it isn't particularly photogenic.

You are lucky. I only get PBS late at night with rabbit ears when the cloud
cover is right.... so, how do you make okra less slimy?

It was slivered, like Frenched green beans, and supposedly this helps
with the slime factor. At least in that cooking method, it seemed to
help. Bittman stir-fried it, til it was caramelized and slightly
crunchy.

Add some acid, tomatoes, vinegar or lemon juice. Not too much vinegar
or lemon.
