Default Lunch this week: composed salads

I am really enjoying these! I steamed some green beans, some potatoes,
lightly sauteed some squash till done to my liking, added some sauteed
chicken and some fresh diced tomatoes. Lightly dressed with Spanish EVOO,
sherry vinegar and a dash of salt.

I'll be doing this a LOT this summer.

Yes! Composed salads appeal to the artistic senses as well as serving
taste and nutrition very well. Plus you get to experiment with a
variety of dressings. When I worked there was a nearby restaurant
that made a beautiful salade niçoise; nowadays I get the tostada
compuesta at a nearby taquería. Making our own is part of the fun of
growing our own veggies, too, though that's not necessary. -aem

LOL! All I do is drizzle on the EVOO and vinegar, I don't mix up a
dressing. And I hate mustard anyway :-P

Yeah, but... you still gotta have some fresh ground black pepper...
and it's not a salad without lots of thinly sliced onion. I'd toss on
a can of sardines, and a couple hard cooked sliced eggs... gotta have
protein.
