Default Quesdillas

So far I've been dying from a spring cold since Tuesday. Today was the
first day my nose didn't weigh 200 lbs ans I had enough energy to go to the
store...I've been craving quesdillas all week. Tomorrow after I recover
from the strain of my grocery trip...I set chicken quesdillas in my sights.

It is so strange...I've been making those groaning noises that my father
made, due to the aches and pains of the cold. Oh JoY! Another sign of old
age settling in, just what I need..

I do that too. I'm 60. A couple weeks ago my buddy was grumbling
that *he* does it, too; I'd already noticed it but hadn't mentioned it.
He's only 45.

Hot and Sour Chicken Soup with Lemon Grass

INGREDIENTS
4 cups chicken broth, homemade or canned
3, 4oz chicken breasts, cubed
4-6 disks ginger root, coin-sized
1 tsp. brown sugar
6 Serrano peppers, rough-chopped
4 stalks lemon grass, crushed and chopped
1/2 cup lime juice, approx 3 limes
3 TBS. shallots, minced
2 TBS. fish sauce
2 TBS. garlic chili pepper sauce*
2-3 TBS. cilantro, chopped

* I prefer product by The Pepper Plant for heat and taste.

DIRECTIONS
Combine broth, lime juice, three strips of the lime rind,
Serranos, chicken, ginger and brown sugar to a large pot or in
a crockpot.
To prepare lemon grass, remove all but bottom 5 inches of
stalks. Crush and place outside sheaths into soup. Mince the
tender inside of the lemon grass. Add to pot.
Bring broth to a boil and turn down to a simmer. Cover,
and cook at an active simmer for 15 minutes.
Last 15 minutes of cooking time add remaining ingredients:
fish sauce, and garlic chili pepper sauce and bring to a
simmer. Sprinkle with cilantro and serve immediately.

quesdillas is AFAIK Mexican for grilled cheese sandwich. It always has
cheese and tortillias everything else is optional. Mine were shredded
monteray and colby cheese, rotisserated chicken breast, sliced red bell
pepper and whole wheat tortillias. I cooked them in the oven on a pizza
stone. 12 minutes per side on a cookie sheet at 400f. Sides were el passo
medium salsa and sour cream. Note I am sick so I'm eating more comercial
stuff than normal.

sorry alan, jokes don't always travel well and i detest emoticons. i have a
friend that runs a taco truck (okay, so it's a roach coach) and this is his
standard response to anyone that orders a quesadilla.

I heat up a large flour tortilla in a hot lightly oiled pan and add
precooked fixings on one half, then fold it over like an omelet, then take
tongs and grip the open ends and drap and flop it over and let it finish
melting the cheese. I don't do one tortilla, fixings, second tortilla flip
method. Too much trouble. Chop into two or four pieces.

Typically baby shrimp or shredded chicken, green onions, bacon bits, pepper
jack cheese and avocado.

YMMV.
