I had a bag o' garbanzos in the pantry. Reason enough for soup in my house.
I cooked all of the garbanzos in the pressure cooker, and once cooked, put half of them in the freezer for another batch o'soup. Sauteed a chopped onion and several cloves of garlic (I wanted it to be REALLY garlic-y), then added a finely chopped carrot and continued to sautee. Threw in quite a bit of cumin, coriander, aleppo pepper and a touch of cayenne. Added broth, some tahini, a LOT of lemon juice (Meyer, from my tree) and about half of the garbanzos. Blitzed the beejeezus out of it with the stick blender. Then added a medium-chopped sweet potato, some chopped frozen spinach and the remaining garbanzos. Cooked until the potato was cooked through and added some chopped flat-leaf parsley and cilantro. Oh my goodness, delicious. Very tasty indeed, such nice flavor with all that lemony, garlicy, herby, spiciness to it. Had it for lunch along with some toasted pita bread and a salad. TammyM |
