There are thousands, if not more, Indian spice mixes. It is said that every village, if not every family, has its own garam masala recipe. That said, the most likely candidate for a potato bhaji that has an earthy green color would be some variation on Aloo Methi. This dish can have a heavy dose of kasuri methi in its preparation. If by earthy you mean brownish, then I would look at an aloo chole - which would include chickpeas but has a rich earthy brown sauce.
