When life throws you ham (or at least 1/2lb. More than you wanted) make
ham salad. The guy at the deli counter didn't ' hear me say a half pound so when I got home I figured I'd whip up some ham salad. Used to eat it often as a kid but not so much these days. I figured it's sliced sandwich ham but what the heck. I also figured I'd like to spice it up a bit from the normal ham salad so I tried this. ½ lb Ham chopped fine 4 pepperoncini peppers 2 jalapeño peppers 1 hard boiled egg ½ roasted red pepper ¼ cup chopped onion 1 squirt of dijon mustard Prepared Horseradish to taste (for me a lot) Enough mayo to reach desired consistency – I like my ham salad slightly “dry” Let it mature overnight and today I toasted some pita, threw in a little baby spinach, and finished with the ham salad. Mmmmmmm. Nice & spicy. The lucnh meat ham is a little more salty than normal ham and the pepperoncini were salty too but I like salt so no problem. Next time maybe some chipotle mustard will go in. |
