It's to do with what there is besides the schnitzel. Lots of variations.

You can do most of these recipes using pork loin or turkey cutlets, beaten
flat and wide with a non-toothed beater. Yes, it is slightly different, but
it is also delicious, so why not?

All the Italian veal cutlet recipes can also be made with those, and at most
ordinary restaurants they are. It of course says so on the menu, but
scallopine are too costly for a place that does a whole meal for ?11 - 15.

In my three trips to Germany the only bad meal I ever had was a Jagerschnitzel
in Rotenburg ob der Tauber. I was expecting a schnitzel with a mushroom gravy
but what I got was a burger pattie with mushroom gravy. It was disappointing. I
had a real one on a subsequent trip, and it was quite good.

I used pork cutlets in my jagerschnitzel...a pack of them here is not
expensive at all......
