Default Oven temp help

I got a new toy... a non-contact thermometer.
I also have a cheap oven thermostat and I would like to check and calibrate
it, and my oven.
I have a friend in the restaurant trade and he would like his big Blodgett
Convection ovens checked too.
I wonder if I put a chunk of angle iron, say 3x3x4, in the preheated oven
for 30 minutes, and then took its reflected temp, if that would be a valid
check on our ovens thermostats?
Any ideas. . . . . ? thanks

Depends, does your non-contact thermometer have an emissivity adjustment?

It's better known as an infrared thermometer to the rest of us.

In order to calibrate something you need to have an accurate measurement
device. There is nothing magically accurate about non contact
thermometers just because they have a digital readout.

One of the main sources of error in non contact measurement is the
emissivity of the object you are measuring. A good non contact
thermometer will have an emissivity adjustment to compensate for that
effect.

Boiling water. 212 defree F at sea level, adjust according to your altitude
by subtracting 1 degree per 500 feet.
