Default 'twixt lamb and mutton

Is there a name for sheep meat that is older than lamb but younger than
mutton?

Wether in England, castrato in Italy. Takes more than age for the Italian
one.--

According to one source, it takes more than age for the wether as well.

In New Zealand meat from a one-year-old sheep (too old for lamb, too
young for mutton) is called hogget.
