Tried a new recipe for candied carrots yesterday and it was very well
received. I was worried I should have cut down on the cumin at first, but it was perfect. Very nicely fragrant and pretty on the plate. large bag of baby carrots (24 ounces??), thawed 1.5 cups water 1 tsp. ground cumin 1 tsp. ground ginger 2 3 inch cinnamon sticks 4 tsp. lemon juice 6 tbl. honey Bring water to a boil. Add cinnamon sticks, cumin and ginger, then add baby carrots and bring to a boil and simmer covered for 10 minutes. Uncover and add lemon juice and honey, then simmer uncovered for 5 min or so until liquid evaporates. Stirring occasionally. |
