Cooking with grapes (Polenta bread pics)
 
In this period grapes are beautiful! So I have made this Polenta bread with
grapes.

Hear is the recipe

POLENTA BREAD WITH RED GRAPES

Yield: 10 porzioni

100 gr polenta - (precooked)
400gr water
380 gr bread dough
400 gr red grapes
bread flour - as needed
coarse salt - as you like
pepper - as you like

Prepare the precooked polenta following the instruction on the package (with
100gr of polenta and 400 ml of water I have obatained about 380 gr of cooked
polenta) and let it cool.
On a rolling board, mix well the bread dough with the cold polenta. Add some
flour (few at a time) and begin to work with spatula, because the dough is
very sticky and soft. Add flour till you obtain a non stick dough (similar
to the pizza dough). Make a ball; with a knife make a cross on the surface
and put it in a bowl covered with kitchen film. Let it rest in a cool place
for about 3 hours or more if necessary. You should obtain a double-rising.
When it is rise, put it again on the rolling board and add the grapes. Mix
well with your hand and put it in a baking pan (pressing it a little).
Spread the surface with few salt grains and black pepper and let it rise
(covered with a table cloth) for about one hour.
Preheat oven at 200°C (400°F) . When it is ready put the bread inside and
cook for about 35 minutes.

The recipe is tucked away. That looks amazing. Though grapes are not in
great supply right now they will be next year (we live in Northern
California the home of California wines). Thank you

Only at three prices and not as good in the flavor department. I really like
what we can get at the local fruit/vegetable stand and follow those
availabilities most of the time.
