Hi,

I've searched my ISPs newsgroups for recipes for slow cookers, but found this one and only a few others.

Is this newsgroup a good source for slow cooker recipes? Thanks!

Beef Stew (Slow Cooker)

6 carrots, diced (peeled, optional)
4 potatoes, cubed

2 Tbs. Olive/Vegetable Oil
1 Tbs. flour
1 Tbs. curry
salt and pepper, too taste

METHOD:
Mix flour, salt, pepper, and curry into a Ziploc(tm) bag. Dredge
meat in flour coating. Using a 12" skillet, or large Dutch Oven,
heat oil to smoking. Set meat in skillet and brown on all sides.
Went meat is done browning set remove from skillet to rest. (Do
NOT clean up skillet or toss flour dredge yet.)

In slow cooker, layer, potato cubes, carrot slices, and onion;
pour 3/4 cup beef stock into crock. Set in browned beef. Cover and
set temp/time lo/hi).

Put skillet back onto flame. Add pat of butter, flour dredge and
brown to preferred darkness. Add in remaining stock; watch for
dumpling formation. Stir and reduce. When this is able to coat
the back of a spoon without running off, it's done and should be
added into crockpot.

Run errands and come home to a dinner ready by 5 pm.

Spicy Beef Stew

Ingredients:
2 Tbs. oil
2 lbs. beef, cut into 1" pieces
1 medium onion, chopped
1 large green pepper, chopped
3 cloves garlic, minced
4 jalapeno peppers, finely chopped
1 14 1/2-oz can diced tomatoes
1/4 tsp. cumin
1 tsp. oregano

Directions:
Heat oil in skillet. Cook beef until browned. Remove and
drain. Place onion, green pepper, garlic and jalapeno pepper in
skillet and sauté until slightly cooked. Add all ingredients to
stoneware and stir to combine. Cover cook on Low 7 to 9 hours or
on High 3 to 4 hours.

I may well try this recipe, but the amount of liquid you use appears to
be inadequte for the considerable amount of produce. Would you comment
please?

Water cooks out of the meat and the vegetables. Because the slow cooker is
covered, the vegetables will steam. 1 cup is more than enough to begin with.
The rest of the moisture will come from the other ingredients.

If you add more liquid, it's going to be beef soup. I've made
both. If you want stew, the vegetables and cup of broth are more
than adequate with the lid on the crockpot.

Slow cookers don't allow evaporation, so the amount of broth indicated
in combination with the liquids that will be released from the
vegetables will be quite sufficient.

<if you read the literature that comes with your slow cooker (it
probably includes recipes, too), you'd have known that>

I did your beef stew and it was very good. Neeedless-to-say, I shall be
doing it again.

When you mention curry do you mean curry powder? When I dredged the
meat in the mixture there was no flour dredge left over so I added some
more.

Instead of searching newsgroups, try Googling "crock pot" recipes,
you'll find thousands.

We've had some interesting discussions lately. You might, however, want
to check Google and usenet with "crockpot" instead.

I got the valuable tip of buttering the crock before cooking oatmeal in it
from our own Sheldon. Thank you Sheldon. Barb's Crockpot Caramelized
Onions also rock.

I have rediscovered mine and am cheerfully working my way through "Not
your Mother's Slow Cooker Cookbook" (Beth Hensperger is one of the
authors). Great stuff.

I'll take a wild guess and say these people were raised with computers
and are most likely college educated. How can they be so stupid?
