No Grease Double Battered Fried Chicken.
You're mouth is gonna like this. I posted this a year ago. I made this for a small Christmas party. Pre-heat the oven...400 deg?? (It's been a while) Chill the chicken in milk or buttermilk. --- Coat chix parts in your best crust mix. On stove top, fry on med/high. After it's golden, take it out, let it drain and cool to touch. This is not going to take long, you're not trying to cook the chicken, just brown the crust, so turn up the heat. Re-coat with your favorite crust mix (I like lots of red and crushed peppers) Repeat frying till light golden brown. Finish cooking in the oven, about an hour??? (It's been a while) Try using a drip pan, or a regular pan is fine. -- It is not greasy after doing this, baking really drains a lot of oil from the chicken and crust. This is more like a hybrid style of cooking fried chicken. I've made this twice in my life. Each session tasted different. I don't have a recipe for good crust. One thing I insist on adding, is a inconspicuous amount of nutmeg, it really sets off the natural flavor of the meat. Your favorite troll. |
