Thyme - too much. What to do with it?
 
I accidentally bought some thyme even though I wasn't out of it. It'll
take me two years to go through 2 ounces, unless you know of any
recipes that use a lot of that spice - preferably not ones that demand
expensive ingredients or a huge amount of beef or chicken. Help,
please?

Dried Thyme, stored properly, will last for a lot longer than 2
years..... :-)

Thyme - too much. What to do with it?
 


My grandmother grew thyme. She put it in every savory dish she made. It
is good in just about everything so just use it. If you can dry some of
it, that would be wonderful. Hang a bundh upsidedown in a dry place for
a few days, then, you can put the dried herb in jars and keep it for a
very long time/thyme.

First off, I store all my spices and herbs in the freezer. Opening up my
kitchen freezer door is like opening an eye level spice cabinet.

Here is one recipe that uses a bit of thyme:

Monastary Lentil Soup

Recipe By :
Serving Size : 6

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 large onions -- chopped
5 large carrots -- grated
1/2 teaspoon marjoram
1/2 teaspoon thyme
1/4 cup olive oil
1 16 oz can whole tomatoes
5 cups water
3 beef bouillon cubes
1 cup lentils -- rinsed
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup white wine
1/4 cup chopped parsley
1 cup cheddar cheese -- shredded

Saute onion, carrot in oil with marjoram and thyme.
Add tomatoes, water, boullion, lentil, salt and pepper. Stirring to
dissolve cubes. Bring to boil, Lower heat and cover and simmer about 1
hour till lentils are tender.
Add wine and parsley- simmer 2 min
Serve with cheese on top

Thyme is not a spice, it's an herb, a rather inexpensive herb, that can
be used in myriad dishes (great in omelets and baked into breads).
Assuming you're talking dried it will keep a number of years if
securely packaged and kept frozen. Of course you can always smoke it.

It's common in jambalaya recipes, it also goes well in almost any
tomato sauce.

You can send it to me, I go through a lot of it. I use it in almost
anything. It's great on potatoes (mashed, baked, fried, soup...), in any
chicken dish, or with turkey. I put it in soups and pot pies. Tuna
salad, potato salad, chicken salad, etc. It works on most vegetables,
and in vegetable based soups. Use it with oregano and basil for Italian
dishes. Very versatile, thyme is.

Relax. Store it in the refrigerator and it will stay fresh.

You can find thyme popover recices in Epicurious or FoodNetwork,
substitute dried for fresh thyme and you're in business.
