Default I scream, you scream...

I got a nice Ebay deal on a Simac ice cream maker, the kind with a
self contained refrigeration unit & yesterday & today I tried it out,
using the basic recipes that came in the book.

The chocolate ice cream was very nice (I used Callebaut bittersweet
chocolate), the vanilla was delightful (two vanilla beans), but the
gem of them all was the one below.

Boron

Brown Sugar Pecan Ice Cream

1 cup milk
1 scant packed cup brown sugar
4 egg yolks
3 cups heavy cream
1 cup pecan pieces ( I had no pecans, but I did have a tin of
"Poppycock - Just the Nuts," that was pecans, almonds & cashews
encased in butter brickle. I used a cup of that. Whoo-hoo!)

Heat the cream. milk and sugar in a heavy-bottomed saucepan, stirring
occasionally until the sugar is dissolved and the mixture is hot.
place the egg yolks in a bowl and whisk briefly. Still whisking,
slowly pour in about 1 cup of the hot liquid. When the mixture is
blended, slowly pour it into the liquid in the saucepan, whisking
constantly. Cook over heat, stirring constantly until the mixture
thickens slightly and coats the back of a spoon, about 8 minutes. Be
sure not let the mixture boil at any time or will curdle. strain into
a clean bowl and cool thoroughly. Stir in the nuts.

Pour the mixture into the bowl of the machine and freeze.

Makes 5 cups.

Some really good sounding recipes on here! I particularly like the sound
of the one you posted.

I'm sure you really enjoy your new Simac. I've had one since the mid-70s.
While I don't use it constantly, it has held up amazingly well. Enjoy!

This one was certainly well used by the time I bought it, but works
well. I figure if I keep it in the kitchen a week at a time, run
multiple batches & then store it in a cupboard until we run out of ice
cream.

I'd never heard of Simac before -- looks like the kind they use on
cooking shows, pretty cool. I have a pint-sized Donvier that I had
