Default More recycled leftovers!

Almost finished with Thanksgiving......

we had mashed potato patties, stuffed with the rest of the goat gouda,
then rolled in a mixture of flour, breadcrumbs, and seasoning, and
pan-fried.

Served with a NEWLY MADE side dish of chickpeas and tomatoes, and a
shredded zucchini salad.

These were good....and can almost see the fridge again!

You're so much more imaginative than I am.

Two days ago, I shredded some turkey thigh meat, simmered it in Ken
Davis barbecue sauce, and served it on hamburger buns. I'm making
more today by popular demand. Probably have to go out for more
hamburger buns, too.

LOL, creative by budget!

We planned Thanksgiving for 12 (9 actually showed up) and a meal of
leftovers. We ended up witha ton of leftovers after our 2 meals,
mostly becaue I was very ambitoius about side dishes this year!

So far for leftovers, we've had:

root veggie gratin, pureed and turned into a souffle

re-baked stuffing(dressing actually) and gravy and cranberry sauce,
accompanied by the roasted butternut turned into soup

the potato patties

creamed leek omelettes

and tonight the wild rice casserole gets turned into soup - and then
they're gone! finally!

Then it's beans and rice til Friday(payday), lol. We shot the wad on
this holiday meal!

Some people laugh, others smile. Creative by budget is for real and
often a good thing as both of you have proven to us.

Personally, if I had so much leftover turkey... I would have frozen at
least half of it to consume next month, but you two came up with
creative ways to dispose of it without thinking "we're eating turkey
*again*).

Well, actually, the part I was laughing at is the part you
snippede....a comment about my being resourseful and creative. Not by
choice but by being too brike to by new food, struck me as a little
ironic/funny that i could spend about $400 on a single meal and then be
too poor for groceryies for the remaining 10 days of the month..........

Thanks. Never dawned on me that you were talking about yourself. Your
leftovers were far nicer than our initial meal! )

They were good.....but I sure am tired of them!

Last night I used up the wild rice casserole by turning it into soup.
It was good, but I'm really sick of casserole foods by now! Tonight
we'll eat omelettes, and tomorrow I'll get paid and grocery shop!
