-= Exported from BigOven =- Irish Style Potato Salad The Irish make a warm, traditional dish with potatoes and cabbage called Colcannon, which is tasty enough in its own right, but on hot summer picnics this chilled version provides a delightful combination of cool and creamy with crunch! Recipe By: Pete & Peggy Romfh Serving Size: 8 Cuisine: American Main Ingredient: Potato Categories: Vegetarian, Meatless, Low Fat, Side Dish, Salads, Brunch -= Ingredients =- 1 pound Russet potato ; - 1 large or 2 medium 1/2 cup Miracle Whip Lite ; - or low fat mayonnaise 1/4 cup Fat Free Yogurt ; - plain 2 teaspoons Dijon mustard 2 tablespoons milk ; - 2% 2 teaspoon cider vinegar 1/4 teaspoon salt 1/2 teaspoon Splenda 1/8 teaspoon cayenne pepper 1/8 teaspoon black pepper 1/4 teaspoon dill weed 1 clove garlic ; - minced 1/4 cup green onion ; - sliced fine 1 cups green cabbage ; - chopped fine 2 teaspoon parsley ; - chopped -= Instructions =- Peel the potato(s) and cut them into 3/4 inch cubes.Boil or steam them until tender, but not mushy. Drain and allow to cool. Combine the ingredients from Miracle Whip through garlic in a large bowl. Fold in the potatoes, onion, cabbage and parsley. Chill thoroughly before serving. Makes about 4 cups.
