Default Fruit issues

Hubby craves fruit all the time. I seldom do, but realize that some fruit
is a healthy thing to include in my diet, but NOT to excess. So what I
have been doing is making a big fruit salad with bits of all kinds of fruit.
A tiny dish of that satisfies our fruit craving, without going over the top,
carb wise.

I really don't like most fruit but was told I had to eat it when I was
pregnant. So foolishly I tried to disguise the fruit in Jell-O. This was
kind of a silly thing to do because I don't really like Jell-O either. But
it can make you feel like you are eating more of it when you do that.

One fruit I do like is cranberries. A couple of times a year I make a
double batch of cranberry salad. No real recipe. If I can get cranberry
Jell-O I will use that. I don't think they make it any more. I did once
get a different brand of it online. For the past few years I have used
orange flavor. Sugar free.

I start with a bag or two of cranberries. Chop them up in the food
processor and mix with Splenda to taste. I guess you could use another
sweetener if you prefer, because this stuff isn't really cooked. Then I mix
in plenty of chopped celery and nuts. Usually pecans but walnuts will work
too. My mom would add some chopped apple and orange but I leave these out.
I do add the grated zest of an orange though.

I then add some prepared sugar free Jell-O that has been allowed to set
slightly. I usually make these in foil bread pans. They are a good size
and I can bring one to my parent's house and not worry about having to lug a
dish back home.

We have that same problem. Making it into fruit salad and putting some
lemon juice into it as a preservative helps a lot. Even after several days
it is still good.

i guess lemon would make sense, DH's stepmother makes a "dressing that has
lemon juice, a bit of oj and splenda in it, that seems to preserve good

Another trick is to add one can of some canned fruit to your whole batch of
fresh fruit. They always have a bit of some preservative in the syrup.
