Default Tacos for dinner

My daughter made soft tacos for dinner. Hand rolled tortillas, beef
marinated in lime juice and homemade spicy salsa verde for dipping (for us
grownups). She cooked the beef for the kids. I had one raw and one cooked.
Base BG 109. One hour PP 138.

Tacos work very well for me. I can eat two or three, depending on how many
carbs in the tortilla/shell.

Sometimes I miss having something crunchy to put the salsa, avocado,
lettuces and brisket on. Flour tortillas just don't crisp up right,
or maybe it is really the corn flavor I am missing.

I seem to remember someone here reporting they had found a low-carb
corn tortilla--I can't remember if it was fresh or already crisped.

I searched the group but couldn't find it, maybe I imagined it....

This is what I do. My kids can't handle taco shells too well so I make tacos
nachos-style. I put the ingredients on a bed of corn chips for them and for
me I put all the ingredients on a plut then use just a few corn chips for
myself. Can scoop quite a bit of meat and other stuff onto one corn chip.

if you get the small ones you can deep fry them to make crisp shells.

I actually find eating two shells wont spike me if they don't have a lot of
junk in them..

what I do is fill two shells to overflowing with a bit of meat a bit of
cheese and a ton of lettuce and homemade salsa and sour cream.

corn tortilla--I can't remember if it was fresh or already crisped.

That was me. The brand is La Tiara. I think they are made in Missouri. If
you live near there you may be able to get them. Otherwise you'll have to
buy online. The reason they are low carb is that they are paper thin. But
amazingly they don't break!

I actually prefer flour tortillas. I don't try to crisp them though. But
alas they stopped working well for me BG-wise. Now I buy some little corn
tortillas that say they are for taquitos. I eat them soft though, with
beans folded inside.

Here they make little bite sized corn chips that are shaped like little
bowls. You can fill them with stuff. We can't eat them because of the
soybean oil, but they are good.

crunchy, but you can fill them with all kinds of stuff.

We love the enchiladas I make wiht leftover chicken. I also make my own
enchilada sauce. It's pretty easy.

I make a beer can chicken with a whole, small chicken. There are only
two of us, so it makes 3 meals.

Can also be called standy-uppy chicken. You sit the chicken on about a
half can of beef and cook it vertically in the oven or on the grill. I
suppose you could do it over a can of Coke, but it wouldn't taste the
same:-)

I've done it with a half can of diet 7 UP, Ginger ale and orange soda,
but not Coke.
