I love this salad. Cucumbers were on sale today 4 for $1 so I made it.
It serves 4. Cucumber Sunomo Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large cucumbers -- peeled 1/3 cup rice vinegar 2 tablespoons Splenda or liquid sugar-substitute 1 teaspoon salt 1 1/2 teaspoons minced fresh ginger root Cut cucumbers in half lengthwise and scoop out any large seeds. Slice crosswise into very thin slices. In a small bowl combine vinegar, sugar, salt and ginger. Mix well. Place cucumbers inside of the bowl, stir so that cucumbers are coated with the mixture. Refrigerate the bowl of cucumbers for at least 1 hour before serving. -- Janet Wilder Bad spelling. Bad punctuation Good Friends. Good Life |

![]() Looks yum! Thank You!. I do similar , My mom's Viennese cuke salad which uses lots of fresh dill, minced red onion, white vinegar, salt, sugar ( sugar sub ). We usually get a ceramic crock ( anything non metal ) and layer cukes, dill, onion, etc. Then mix the vinegar, sugar, salt ( for a sweet/sour taste ) to combine. Pour over cukes to cover and let sit chilled in the refrigerator several hours. This stays crisp and lasts for days. She also does another cuke salad and I will find that and post it. I learned to make a similar salad from my mom. Didn't know it was Viennese. She used rings of sweet onion, cuke slices and a dressing of water, vinegar, salt, pepper and sugar substitute.
