I am looking for a source for such a blender for making salad
dressings. Can someone point me in the right direction for brands
and/or suppliers?

Mike, I've seen one gallon sized commercial blenders, but I haven't seen one
as large as 5 gallons. At that size, I think you will be using large stock
pots or a kettle, combined with a mixer similar to:

The mixer with a 21" shaft does up to 50 gallons. Pick your size and
features.

I hit the channel in the middle of this show a day or two ago, so I'm
not sure what the premise is-- but they built a blender that made a
smoothie from 1000 pounds of strawberries, 1200 pounds of bananas &
152 gallons of yogurt, 40 25pound cubes of ice, and 2 gallons of
grenadine.
