Last spring I went through the roasting-pan purchase mambo and had almost ordered an All-Clad stainless roti pan when I discovered that they do *not* contain an aluminum core for even heat distribution. I know that opinions are split on the importance of that particular quality, but it was (and still is) being deceptively advertised by retailers who trumpeted, "Three-ply: stainless-steel layers sandwich pure aluminum core for even heating." I had to speak with Chris in All-Clad customer relations to confirm that it is 100% stainless steel and has no aluminum core. Just Google "all-clad" "roti" and "aluminum core" and you'll see all the misleading advertisements. Even Alton Brown in his _Gear for Your Kitchen_ book was taken in. The Cuisinart Chef's Classic, on the other hand, according to the Cuisinart CSR with whom I spoke, actually has an internal layer of aluminum. I got mine on Ebay, brand new, for $49. I think that the KitchenAid Five-Ply stainless steel 15" roaster with rack would also be excellent, but costs $149 up and never appears on Ebay. So enjoy that great roasting pan! --Ray |
