Something reasonably ON-Topic... (pork chop sauce)
But then again..
Okay, may be more about Grilling than Barbecue, but the recipe should apply equally well... Made some pork chops for dinner last night, grilled on the Kamado. I had brined them with some brine mix a friend had given me (wanted to use it up, but it was pretty good: Victoria Taylor's Traditional Brining Blend http://tinyurl.com/cxkbw). Anyway, I was looking around to see what I could use to make a serving sauce for the chops..here's what I came up with... Found some dried plums and dried cranberries. Took about 2 cups of dried plums and about 1/2 cups of dried cranberries and simmered them in 1-1/2 cups water until they were soft and the water was absorbed. Then I mixed in 1 cup of amber jamaican rum and put the whole sheband in a blender and pureed. Added a little salt and pepper and voila, a nice little rum-fruit sauce...went really well with the chops. Cheers, -Chef Juke "EVERYbody Eats When They Come To MY House!" www.chefjuke.com |
