Hi,
I'd like to try smoking a brisket this weekend in my WSM. I'm located in the South Bay Area (in California). Can someone tell me where I can purchase a brisket (around 10lbs.)? Would Costco have this? Is there a good recommendation for a butcher? I live in Santa Clara. Thanks very much in advance, Norm |

Or, you could check out a butcher shop where your more likely to get it trimmed the way you want it. There's used to be a good butcher on Bascom east a few miles from the Pruneyard. Don't know if it's still there, it was in the little shopping center where that LARGE Greek restaraunt was. Another one I've bought from is across from the San Antonio Rd. Sears in Mtn. View. And don't even try to call a "premium" butcher like Draegers or one of those upscale markets pretend to be, they'll try to tell you it's "prime" and sell it at $8/lb. "Prime brisket" my ASS. -- |

Those trimmed down jobbies just dont cook as well as those with both the tip and the flat intact. That slab of fat, although a little off putting, trims off easily and makes the attachments more yummy. John in Austin |

They are likely to charge you a very hefty price for a 10 lb. brisket. A better deal is Smart and Final / Cash and Carry, as suggested by others: www.smartandfinal.com S&F / C&C (same company) is a good source of many other WSM supplies, including cuts of beef and pork, mesquite lump charcoal, and all kinds of containers for brining and marinating. -- Yip |
