Default baking with green apples

Can green immature apples be used to bake with? Have enough spiced apple
rings made, and hard frost hasn't happened to have us pick them yet, but a
couple strong winds leaves us with plenty of pretty decent partially bruised
fruits that either will feed the deer or the landfill.
