I think you've got it, too. I'm in total agreement with your assessment
and I actually have made paté a choix many times, usually to make large
cream puff shells or shells for eclairs. I confess I have never actually
made profiteroles, although I've eaten my share. I would not like the
tedium of all those tiny little things.
