Hi! all,
Would anyone have a good recipe for a Cookie Press?? I am making cookies
for a bake sale,,,,,and would like to have a recipe in order to make a large
quantity of cookies.

To make them press out easier, just add a small quantity of eggwhite,=20
say 50 g or so.
It is a very versatile cookie dough and won't rip when rolling out.

Sandy, here are two recipes from my cookie press recipe book. I make both
of these every year at Christmas, and they go over very well.

QUICK-MIX SPRITZ

Time: 10-12 minutes
Temp: 375°F
Yield: 5-6 dozen

2 1/4 cups sifted all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup butter
1 egg
1 teaspoon vanilla

1. Sift flour, sugar, salt, and baking powder together in a bowl.
2. With a pastry blender or two knives cut the butter into the dry
ingredients until mixture is full of very fine lumps. It will resemble pie
crust or biscuit mix, although not as coarse.
3. Measure egg in a measuring cup. A large egg will measure 1/4 cup. If
it does not, add water to the 1/4 cup line.
4. Add the egg and vanilla and beat the mixture very well.
5. Fill cookie press. Form cookies on ungreased cookie sheets. Bake.
6. Remove at once to cooling racks.

CHRISTMAS TREES

Time: 10-12 minutes
Temp: 375°F
Yield: 6-7 dozen

1 cup butter
3/4 cup sugar
1 egg
1 teaspoon almond extract
1/4 teaspoon salt
2 1/4 cups sifted all-purpose flour
1/4 teaspoon baking powder
Green food coloring

1. Cream butter and sugar well. Beat in egg and almond extract.
2. Gradually blend in dry ingredients which have been sifted together and
tint dough with a few drops of green food coloring. Mix well.
3. Fill cookie press. Form cookies on ungreased cookie sheets, using tree
plate (usually included in a cookie press set).
4. Decorate with tiny candies. Bake
5. Remove at once to cooling racks.

Gingerbread Spritz

Amount Measure Ingredient -- Preparation Method

2 3/4 C all-purpose flour
3/4 t baking powder
1/2 t ground nutmeg
1/2 t ground cinnamon
1/4 t ground cloves
1/4 t ground ginger
1 C margarine
1/4 C molasses
1/4 C packed brown sugar
1 egg
1 t pure vanilla extract

Preheat oven to 400° F.

Stir together flour, baking powder, nutmeg, cinnamon, cloves, and
ginger; set aside.

In a large mixing bowl beat together margarine until smooth. Add
molasses and brown sugar and beat until fluffy. Add egg and vanilla; beat
well. Gradually add flour mixture until all combined. DO NOT CHILL!

Prepare cookie press with desired design. Fill press and place cookies
two inches apart on ungreased cookie sheet.

Bake in oven for about 6 minutes or until the edges are firm but not
browned.

Remove and cool completely on wire racks.

Makes about 4 dozen cookies.

Here is my favorite Spritz cookie recipe:

Makes about 3 1/2 dozen 2-inch cookies


1/2 cup blanched sliced almonds
3/4 cup sugar
1 cup unsalted butter
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups bleached all-purpose flour
pinch of salt
optional glacé cherries, sugar sprinkles, or dragées

In a food processor with the metal blade, process that almonds and sugar
until they are ground powder fine. Cut the butter into a few pieces and add
it with the motor running. Process until smooth and creamy. Add the egg
and extract and process until incorporated, scraping the sides of the bowl.
Add the flour and salt and pulse until just blended.

Load into a pasty bag or cookie press and form cookies about 2 inches apart.
Decorate with optional glacé cherries, sugar sprinkles, or dragées.
Bake for 10 to 12 minutes, depending on the size, or until pale golden. For
even baking, rotate the cookie sheets from top to bottom and front to back
halfway through the baking period. Transfer to wire racks to cool
completely,

Store in an airtight container at room temperature, or in the refrigerator
or freezer.

Keeps on month at room temperature or several months frozen.
