3 tablespoons sugar
3 tablespoons water
2 tablespoons crystallized ginger
1/4 teaspoon vanilla
4 kiwi, peeled, sliced
2 oranges, sectioned
Boil sugar, water and ginger to light syrup consistency, about 3
minutes. Stir in vanilla; cool slightly. Fold fruit into syrup.
Cover and chill well, 2 hours.

3 kiwi, peeled, in chunks
1 cup water
1/3 cup sugar
2 tablespoons light corn syrup
Grated peel of 1/2 lemon
Juice of 1 lemon
1 cup vanilla wafer crumbs (18-25)
2 tablespoons melted butter
Combine crumbs and butter; Press firmly into bottom of 9-inch pie
pan. Freeze. Puree kiwi to equal 3/4 cup; stir to dissolve sugar.
Combine with all the rest. Pour into 9x9 pan; freeze until firm but
not solid, about 11/2 hours. Spoon into chilled bowl. With electric
mixer beat until light but still frozen. Spoon into frozen crust.
Freeze 4 hours or longer. Garnish with lemon and kiwi. Serves 8.
