Baked Sole with Tomatoes and Garlic
2 Tbsps. olive oil
2 sole fillet, about 6 oz each
1 large tomato, seeded and chopped
1 Tbsp. garlic, minced
1 Tbsp. fresh parsley, chopped
Preheat oven to 400 degrees. Brush a shallow baking dish with some olive
oil. Place fillets in dish and season with salt and pepper to taste.
Combine remaining olive oil with tomato and garlic in a bowl. Spoon over
fillets. Bake about 15 minutes, or until cooked through. Serve fish
sprinkled with parsley.
Makes 2 servings.
