I am looking for a light and fluffy dessert. Something which is easy to
fix and not too many calories.
You need a food processor & electric mixer for this.
Fruit Fluff
6 oz hard-frozen[1] fruit[2] (in smallish pieces)
1 lg egg white[3]
2 tsp lemon juice
1/8 - 1/4c sugar (depending on sweetness of fruit)
1.5 tsp fruit liqueur or spirits[4] or 1/4 tsp vanilla extract or 1/8
tsp almond extract
Finely chop the frozen fruit in the food processor, scrape down the bowl
as needed, and continue to process until it looks like snow. Put the
bowl back in the freezer and let refreeze for 30 min or so.
Re-chop the fruit for a few seconds to break it up again, and then turn
into a chilled bowl with the remaining ingredients. Whip with the
electric mixer on high until the mixture becomes fluffy. This will
happen pretty suddenly and will take 3-5 minutes.
This can be served immediately or frozen--keeps frozen & covered for 2
days. This makes about 3 cups, and can easily be doubled.
[1]This really has to be *hard* frozen--if you've got an iffy freezer I
wouldn't count on this working.
[2]Most fruit works for this on taste, but note that the color will be
very pale--bright colors like blueberries are definitely prettier. If
you want to use something with seeds (e.g., raspberries, concord
grapes), puree the fresh fruit & sieve to remove the seeds, pour into a
shallow pan to freeze, and break up into 1" chunks.
[3]Raw eggs--caution salmonella.
[4]Rum works well with most fruit, and eau de vie is of course perfect.
