Zuccinni Fritters Mid-WEST style
1 package corn muffin mix
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1/3 cup milk
2 cups shredded zuccinni
1/4 cup onion
1 green pepper finely chopped
2 carrots shredded or 1/2 cup pre-bagged shredded carrots
Combine muffin mix, cheese, salt and pepper. Add eggs and milk whisk until
dry ingredents are moist. rinse and drain zuccinni. Add zuccinni, green
pepper, onion and carrots. Make into small thin patties. Grease skillet
with crisco heat on medium/low brown on both sides.
