No it does not, in fridges at least, I don't know about carpets.
Actually, I would not be surprised if it works on carpets because the
baking soda would be in actual contact with whatever smells.

You just think it works because you expect it to work. Or, it's the
passing of time that does the trick - like the guaranteed cure for the 3
day flu: drink a bottle of gin every day for 4 days.
