Lime Marinated Seafood

1 poundshrimp, peeled and deveined
1/4 pound bay scallops
grated zest of 1 medium lime
1/4 cup fresh lime juice
1/4 cup olive oil
1 tablespoon Dijon mustard
1/4 cup pickled sliced jalapenos, chopped
1/4 cup red onion, chopped
3 tablespoons sweet red pepper, diced
2 tablespoons capers, drained
1/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 cup cilantro leaves, chopped, plus extra for garnish
lettuce, shredded

Piquant, marinated seafood makes an absolutely gorgeous opening to a meal or a
main-course salad for a summer lunch or dinner.
Cook shrimp and scallops in boiling water for 1 minute or just until opaque;
drain. Combine lime zest, lime juice, oil, mustard, chiles, onion, red pepper,
capers, oregano, and salt in medium bowl; stir in shrimp and scallops. Set
aside for 15 minutes, stirring occasionally, to allow seafood to absorb
flavors, and serve at room temperature; or serve slightly chilled. Stir in
cilantro just before serving and spoon onto shredded-lettuce-lined salad
plates.
