Sweet Pepper and Onion Relish
Pepper and Onion Relish a la Nita
12 red peppers (sweet), seeded
12 green peppers (sweet), seeded
6 large Vidalia or sweet type onions, peeled
1 1/2 pt. Apple Cider Vinegar
3 Tbsp . salt
2 cup sugar
You can add 2 or 3 hot peppers, if desired
Grind peppers and onions as coarse as possible, pour boiling water to
cover. Let stand 5 minutes. Let it drain a while. Dissolve salt and sugar
in vinegar. Boil all ingredients for 20 minutes. Place in sterilized jars
and seal. Makes about 5 pints.

Sweet Pepper and Onion Relish
20 to 25 sweet red peppers, medium size - coarsely chopped
4 large white sweet onions - coarsely chopped
1 or 2 very finely chopped jalapeno peppers
3 cups sugar
3 cups apple cider vinegar
2 Tbsp salt
Place all ingredients in a large pot. Stir to blend thoroughly. Bring to a
low boil. Reduce heat and simmer for 30 minutes. Spoon into pint jars,
then process in a boiling water bath for 20 minutes.
