Easiest Crab Cakes
1 pkg herb garlic mashed potatoes
1 (15 oz) pkg crabmeat
2 medium onions
1/4 lb American cheese, chopped
1 tsp black pepper
salt, to taste
1/2 cup seasoned breadcrumbs
Make mashed potatoes as directed, using a little less milk if you want
the potatoes firm. Chop onions and cook in greased skillet until
translucent. Add onions, American cheese, crabmeat, and black pepper to
the mashed potatoes. Mix well in a 9-inch casserole container. Coat top
with the breadcrumbs and bake in 350 F oven for half an hour.
