Brussels sprouts with chestnuts and bacon
1 1/3 kg 3 pounds) Brussels sprouts, trimmed
1 large knob of butter
12 slices bacon (rashers of streaky smoked), cut in thin matchsticks
200 grams chestnuts (1 packet) cooked and peeled, vacuum-packed
Bring a large pan of water to the boil, add the sprouts and cook until
just tender, 8-12 minutes, depending on their size. Drain well.
Meanwhile, melt the butter in a large frying pan or wok and fry the bacon
until crisp. Add the chestnuts and cook for about a minute, just to heat
through. When warm, tip in the drained Brussels. Mix and season with salt
and freshly ground black pepper.
Serves 10-12
Work time 20-30 minutes. Cook time about 15 minutes
