CRUSTY PIZZA DOUGH

The Bread Machine Cookbook

This will make a small 14" pizza.

INGREDIENTS:
2/3 cup water
1 1/4 tsp. olive oil
1/3 tsp. salt
1 cup all purpose flour
1 cup whole wheat flour
1 tsp. yeast

Roll dough into rectangle or circle, depending upon pan to be used. Place
on pan and turn excess under, forming a crust on the side. Brush very
lightly with olive oil. Cover and let rise about 30 minutes. Top with
pizza sauce and desired toppings. Place in a cold oven, turn temperature up
to 450 degrees and bake until crust is brown and cheese is melted, 30 to 45
minutes.

OPTION: Add 1/3 cup of mozzarella cheese to the mix for interesting taste
and texture.

CINNAMON ROLLS

The Bread Machine Cookbook

These rolls are very good and are not overly sweet. About 2/3 of the
testers liked them as is; the others wanted them sweeter. If you want a
sweeter bun, make a glaze out of milk and powdered sugar to spread over the
top while still warm.

Makes 9 rolls

INGREDIENTS:

2/3 cup milk
1 1/4 tbs. butter
1 egg
1 1/3 tbs. sugar
1/3 tsp. salt
2 cups all purpose flour
1 tsp. yeast

FILLING:

Mix together:

2 1/2 tbs. sugar
1 tbs. cinnamon
1/3 cup raisins (optional)

FOR BRUSHING:

1 1/4 tbs. melted butter

Roll dough into a rectangle, brush with melted butter and spread the
cinnamon mixture over that. Roll dough as a jellyroll and cut into slices
of approximately 1 1/2" width. Place in a muffin tin, cover and let rise
about 35 to 40 minutes. Brush top lightly with melted butter if desired.
Bake at 400 degrees for 20 to 25 minutes.

Unfortunately, she doesn't include coffee cake, but a spiced coffee bread or
a Lithuanian coffee bread. If you want those, I can get them to you.
