Curried Salmon Eggs
1 pound Salmon -- 1 (1-pound can)
2/3 cup mayonnaise
1 tablespoon pimiento -- chopped
1 tablespoon green pepper -- chopped
1 tablespoon onion -- grated
1 teaspoon horseradish
1 teaspoon curry powder
18 hard-cooked eggs
Parsley
Drain salmon; mash. In a bowl, combine mayonnaise, pimiento, green pepper,
onion, horseradish and curry powder. Cut eggs in half lengthwise and
remove yolks. Mash yolks. Add to mixture. Blend; chill. Stuff whites.
Garnish with parsley.
Yields 36 appetizers.
