Shrimp or Scallops Parmesan
3 to 4 cloves of garlic, minced
2 tsp olive oil
Bag of Spinach
1 lb large shrimp or scallops
Italian Seasoning
1 can ready dices tomatoes
Parmesan cheese
Salt & pepper
1/2 cup shredded cheese (Italian blend)
Saute minced garlic in 1 tsp olive oil. When browned, add the spinach and
saute until soft. Drain Spinach and leave in colander. Put another tsp
of olive oil in pan. Saute shrimp or scallops that have been seasoned
lightly with Italian seasoning. When lightly browned add the can of ready
diced tomatoes and simmer just a couple of minutes so the scallops don't
toughen. Bring the spinach back to the pan and mix. Add some parmesan
cheese, salt and pepper and the Italian cheese blend. Heat just enough
to melt the cheeses. Serve over spinach pasta or pasta of your choice.
