I have several bamboo cutting boards. I experience no real difference
between bamboo and maple except the bamboo I have is much thicker and
heavier than maple. I like them better than the South American hardwood
Faberware I otherwise have to buy because SWMBO won't stop soaking
cutting boards in the sink.
