It would freeze hard as is. What makes ice cream scoopable is sugar. Same
with Popsicles. The sugar free may have some other additive to prevent them
from being rock hard. Maybe some experimentation will get you there.
Perhaps the machine you saw had better temperature control than the typical
ice cream maker. I've never seen one, commercial or home use.
