Stewed Short Ribs - Kalbi jjim
3 lbs short ribs
3 Tbsp brown sugar
1/3 cup soy sauce
1 large onion, sliced thin
5 cloves garlic, minced fine
2 tsp dashida
2 Tbsp sesame oil
1 cup water
1/4" sliced peeled ginger (optional)
1 cup cubed Korean radish (optional)
Cut ribs into 2" x 1" pieces or leave whole*. Put ribs in pot and cover
with water. Bring to a boil, lower flame and simmer for 2-3 minutes.
(This parboiling removes the excess fat). Drain water off ribs. While
ribs are simmering, mix remaining ingredients then pour over drained
ribs. Bring to a boil, then cover and simmer for about 1/2 hour. Check
occasionally to see that ribs are covered with liquid. Add water if
necessary.
* Cook longer if ribs are left whole.
